So, I cannot believeChristmas is here already! It seems like the older I get, the faster the years fly by! Every year we make tons of yummy cakes, cupcakes, cookies, pastries, platters and baskets for the holiday season. Its a ton of work but the results are so worth the time and energy to make. So, to say last week was busy is a MAJOR understatement! I didn't realize I had overbooked myself and was running around like a mad woman!!! Then to top it all off I received an email on Wed to remind me that I had promised to donate 100 cupcakes for an event on Friday and I panicked BIG TIME! I was running around like a chicken without a head!!! So with the flour and sugar flying , and running on about 3 hrs sleep from Wed to Sunday ~ I finished it all BARELY! So with that being said I learned a few things about myself - I am quite cranky when tired (Cranky is putting it mildly LOL)
- When running on 3 hrs of sleep NEVER sit down. I learned this lesson the hard way when I sat down to work on something and I must have fallen asleep. I woke up on the floor. Lesson learned LOL Always stand up
- I am a perfectionist~ I need to let the small things go .... I wish it was that easy!
- And I would do it all again if I had to! I love making and decorating cakes!
Here are the cakes I made this weekend ~ I hope you love them as much as I do! Here is the Red Velvet Whoopie Pie recipe for you JayDee!! 3 cups All Purpose Flour 1 teaspoon Baking Soda 2 teaspoon Unsweetened Cocoa Powder 1 1/2 cups canola oil 1 teaspoon white vinegar One 1-ounce bottle red food coloring 1/2 teaspoon vanilla extract 1 1/2 cups sugar 2 eggs 1 cup buttermilk Preheat the oven to 350°F. Lightly grease two cookie sheets. Sift the flour, baking soda, and cocoa together. In a separate bowl, combine the oil, vinegar, food coloring, and vanilla. Using an electric mixer, beat the sugar and eggs together until they turn pale and double in volume. Add the oil mixture and beat to combine. Add the flour mixture and buttermilk alternately in five small additions, starting and ending with the flour. Drop the batter by teaspoons onto the baking sheets, allowing 1 inch between drops, as the cookies will spread. You’ll be making 48 cookies. Bake until the cookies are firm but not crisp, about 12 minutes. Transfer immediately to racks to cool. I use the same filling as I use for the chocolate whoopie pies. This is HEAVEN! First I would like to welcome Jaydee and Tandy to the blog and I want to thank Brandy for her genorosity and help!! So as promised Jaydee here is the recipe I use for my whoopie pies. This is my absolute favorite recipe. Most whoopie pie recipes and a very thick filling that is WAY too sweet! I didnt think the filling would be good when I first read the ingredients but it is delicious! Very light and fluffy, and the best part~ not too sweet. So here is the recipe for you! When you try it let me know what you think!! If you would like me to post my Red Velvet whoopie pie recipe let me know! Chocolate Whoopie Pie 2 cups - All Purpose Flour 1/2 cup - Cocoa Powder 1 1/4 tsp - Baking Soda 1 tsp - Salt 1 cup - Buttermilk 1 tsp- Vanilla Extract 1 stick - Unsalted Butter - Softened 1 cup -Brown Sugar 1 Large Egg Preheat your oven to 350F. Whisk flour, cocoa powder, baking soda and salt together in bowl. In a smaller bowl stir buttermilk and vanilla extract together. Im bowl of mixer beat butter and brown sugar till pale and fluffy ( about 5 min). Add egg and beat til well combined. Reduced speed to low on mixer and alternate between dry and wet ingredients. You should always start and end with dry ingredients. Mix till smooth. Using an ice cream scoop, spoon a scoop of batter onto parchment lined cookie sheet. Make sure your batter is spaced about 2 in apart. Bake 11- 15 min. Let cool completely before filling. Filling 5 tbls - All Purpose Flour 1 cup - Milk 1 cup - Sugar 1 stick Unsalted Butter, Softened 1/2 cup - Shortening 1 tsp - Vanilla Extract Put flour into medium saucepan and slowly add milk, whisking till smooth. Set over medium heat and cook stirring with a whisk until mixture is very thick (about 3 min) Transfer to bowl and cool completely. Cream butter, sugar, shortening and vanilla in bowl of mixer until light and fluffy. Add cooled flour mixture and whip till nice and fluffy. Fill and sandwich your whoopie pies! These are amazing! The picture says it all!! Since the weather was horrible yesterday my daughters and I decided to make some whoopie pies as a treat. We have been testing recipes to find the BEST whoopie pie for awhile now. Most of the time you get a dry, heavy cake with frosting that is way tooooooo sweet. I am happy to say we finally came up with an amazing whoopie pie! Soft cake with a light airy filling. It is AMAZING and so easy to make. I think the whoopie pies are great to use for favors, kids parties and sweet tables.  If anyone would like the recipes let me know! I will post it up here for everyone to see! Till next time!! Don't you just love this cake?? Our client sent a picture of her wedding invitation and here is what we came up with. We made a 1/2 sheet red velvet cake with cream cheese frosting, then we covered the cake in a very light tiffany blue fondant with a black pearl border. We made a bunch of black frill fantasy flowers with 3 sugar pearls in the center. All branches and writing was made with black fondant. The lovebirds were made with white fondant and placed right on the branch. Fantasy flowers are one of our favorite things to make. We have been getting alot of requests for directions on how to make our fantasy flowers and we decided to start working on a tutorial to post on the blog.
